My Avocado Pineapple Cucumber Salad recipe is one of those recipes. You don't have to get out any fancy kitchen equipment or even turn the oven on. All you need is a few fresh foods, a cutting board, knife, and a bowl. The result is an addictively delicious summer salad you'll want to enjoy all season long.

The idea for this no-cook summer side dish actually came from my love and addiction to salsa. I love fruit salsa (hello, Pineapple Salsa) so much that honestly, I want to eat it with a spoon sometimes.
Since salsa flavors are so dreamy... I thought it would work perfectly as a side dish too! Turns out it does and you've got to try it too.
Instead of the itty-bitty pieces, you expect in salsa, I decided to chop my veggies in larger chunks. I added cool cucumber and rich avocado to round it out.
This delightful summer dish is seasoned with a generous helping of fresh cilantro, lime juice, and salt. Not much different than your favorite salsa.
The difference is you can actually eat this with a fork or spoon and no one will judge you. 🙂

I will try this but make it more like a salad by adding romaine or spinach and olive oil. The combo of pineapple, avocado and cucumber sounds delish!
