Serves 4

Ingredients

Vegan Tartare

  • 4 medium beetroots cooked
  • 1 small red onion finely chopped
  • 2 tbsp capers finely chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1 tsp balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Vegan cream cheese and crackers for serving

Instructions

  • Place the diced cooked beetroots in a mixing bowl. Add chopped red onion, mustard, olive oil, lemon juice, and balsamic vinegar.

  • Season with salt and pepper to taste, then gently mix with a spoon until everything is well combined.

  • Use a ring mold on a serving plate to create a classic tartare shape.

  • Spoon the beetroot mixture into the mold, pressing it gently down.

  • Carefully remove the mold to leave a neatly stacked tartare. Repeat with the remaining mixture.

  • Drizzle tartare with olive oil and garnish with fresh parsley.

  • Serve with a dollop of vegan cream cheese and toasted bread or crackers. Enjoy!
